Make My Meal Monday

Yes I know its Tuesday...I was lazy yesterday, oops. Yesterday I made a double batch of these. One for us, and one for our friends who just had a beautiful baby girl! Relatively easy, this was one of my first "Impress the future Hubby" Dishes. It takes a few ingredients and time, so I dont make them much anymore. Needless to say he was happy yesterday! Here ya go, enjoy!!!

Enchiladas
This is the single recipe, not doubled!

Ingredients:
1 lb ground beef season with cumin, chili powder and adobo seasoning to taste.
pkg 8 large tortillas
1 can refried beans
2 cans enchilada sauce
1 pkg cheddar cheese






1. Brown ground beef and drain. Add 1/2 can of enchilada sauce and about 1/2cup of cheese. Stir together and simmer.









2. Spread some refried beans onto the tortilla like so. Skip this step if you arent a bean fan!











3. Add some meat mixture to tortilla.












4. Fold each end in and roll to create the enchilada.












5. Repeat until all are filled. Reserve some
meat mix for topping.











6. Spread remaining meat on top of enchiladas.
top with all the remaining enchilada sauce.











7. Top with cheese, bake at 350 for 30-35 mins
until cheese is bubbly! Serve with Yellow rice and
sour cream.
