Make My Meal Monday







Rotel Chicken

So, today I didnt feel like cooking anything complicated. I wanted to just skip cooking...but I already had chicken defrosted and needing to be cooked, so this is what came of it! I looked in my pantry for inspiration and found these :
Here's the simple recipe I came up with ( I am sure I am not the first to think, oh, Rotel would taste good on my chicken)

1 lb defrosted/fresh Chicken breasts
2 cans of Rotel(choose mild, original or hot, in that order of spiciness depending on your like)
1/2 cup shredded cheddar
 Thats it! so here's the steps!

Preheat oven to 375.

Put chicken in baking dish. Open and pour rotel cans right on top.
Coat chicken with the tomato mixture.









Cover in foil.
Bake covered for about 30 minutes (this is depending on how thick your chicken is, but figure out what 10-15 minutes till done is)
Uncover, then cover the chicken with the cheese.
Bake 10-15 more minutes until chicken is completely done!
Thats it!








I served mine with rice and cornbread. Enjoy!!!!

Thoughtful Thursday

So lately Ive been wondering why I feel like Im going crazy. I am sure other people feel this way often. I feel like I am living with a  bi polar person. One minute she’s happy, the next minute shes crying on the floor. I’ve heard insanity is doing the same thing over and over expecting different results, so by that definition, my toddler is insane.  I totally understand that its normal and blah blah blah but seriously it sucks. So I’ve compiled a list of ways to be sure your toddler is having a tantrum.
1.       If people stare at you and wonder why you are a bad parent in public, your toddler might be having a tantrum.
2.       If you feel like calling a priest to exorcise the demon out of your toddler, they might be having a tantrum.
3.       If you partner lovingly tells you “Maybe you should take her outside”  to which you reply “Maybe you should go outside”, your toddler might be having a tantrum
4.       If you’ve thought about duct tape, your toddler might be having a tantrum.
5.       If you think I can’t open the fridge because they will want THAT (to which the cant show you want THAT is!), your toddler might be having a tantrum.
6.       If you have to hide your box of tampons because they think you need to open them and find candy, your toddler might be having a tantrum.
7.       If drinking at 11 am sounds like a viable option, your toddler might be having a tantrum.
8.       If you think your mom’s group is much like AA but could be named TTA (toddler tantrum anonymous), your toddler might be having a tantrum.
9.       If you have one tv constantly on some child related program, your toddler might be having a tantrum.
10.   If you have to write a blog about this and pray for your own sanity, your toddler IS having a tantrum.

I know this seems silly, but without other moms who are going through the same thing, I would be in a straight jacket. So how do I handle these tantrums? I have one myself! Nah, that’s what my blog is for, that’s what my job is for! I need me time! I spent an hour last week getting a pedicure, which I am still going back to my happy place when I think of that.  If you are  a mom of a toddler, make sure you find time for yourself and find a moms group that supports you!!!

Trashy Tuesday


Can you guess what show Im talking about today???

Bethenny Ever After: Season Finale!!!

In this episode Bethenny embarks on her skinny girl tour in an large bus. Her and Jason are talking about baby #2 in most of the episode, so I would guess she'll be prego soon! Her tour seemed to be a very candid speaking engagement where she allows an open question and answer time. It also seems she is getting used to the idea of Jason's parents! I love her new nanny, Dawa, who she says never speaks and doesnt eat! The big news of the evenings show it that she sold skinny girl cocktails for a huge fortune. She is still a partner and has some control but no longer solely owns the rights. I really do love this show. I think its a great example of yes, you can work, be a mom and be married but ya lose a litle brain from it all! It seems she has learned she has to slow down and enjoy the time she has with her family, because you cant get it back!! GO watch this show!

 I cant believe this is the season finale! What will I watch on monday nights and review for you?
 Can you say the Bachelorette!!!!! Im not completely enthused that its Ashley and not Chantal but Im down for some reality tv as you all know!!! It premieres May 23, who's coming over to watch????

Make My Meal Monday



Turkey Meatloaf and Cauliflower Mash


1lb ground turkey
1 small yellow onion chopped
1 green pepper chopped
2 eggs
1/4 cup ketchup
1/4 cup bbq sauce
2 Tbsp spicy mustard
Everglades or Mrs Dash
1 cup breadcrumbs or so

Preheat oven to 350!
Saute green peppers and onions in Skillet
Mix all the ingredients together.
Place in oven safe dish in a loaf shape.
Bake for about 1 1/2 hours or until done!

Cauliflower Mash
1 medium head cauliflower
3 Tbsp cream cheese
3 tbsp sour cream
4 cloves of garlic
3 Tbsp of butter

Chop cauliflower and rinse. 
Boil a pot of water and add cauliflower to it.
 Boil until soft (about 6-8 minutes)
Drain and add cauliflower to food processor.
Pulse processor and add the remaining ingredients
while the processor is running. Serve immediately after!

Make My Meal Monday


Homemade Chicken Nuggets
Whole wheat pasta 
Corn on the cob!

So its Tuesday morning.. I know,It's late. I sat here forever last night trying to think what meal to blog about when I only made home made chicken nuggets for dinner and onion chicken breasts for mike and I. But then DUH, we all could make nuggets at home! Basically, I made a batch of nuggets so I could freeze some for quick lunches, or throw them into a lunchbox when we go out!

Here's all I did:
1 cup of cereal ( I used cornflake style) crushed into crumbs
1/2 cup plain yogurt (you can use milk too)
 Optional: Shredded carrots you process in food processor and mix into bread crumbs

1 chicken breast(or more if you want)

Preheat Oven to 350.
Coat chicken in yogurt. Then coat in crumbs. Put on baking sheet.
Bake for 15 minutes.
Cool, then place portion sizes in to baggies and freeze. When ready to use, micro for 30 seconds or warm in 200 degree oven for 5-10 minutes!

WAY healthier than store bought and will cook in the same time. No processed chicken here!
Caitlin's dinner was a big hit with her last night, I gave her some organic ketchup to dip her chicken in too!
