Make My Meal Monday:

Taquitos


Way back in my college days I loved taquitos. I probably lived off of those, pancakes and mashed potatoes as thats all I knew how to cook and loved! I still love taquitos but I like them cooked the way I like them, not in some bag! Here's my recipe for taquitos. The great thing about this recipe, it make enough for 20 taquitos. I freeze them and use them one at a time. For today's pictures I only did a half recipe, fyi!

Ingredients:

2 chicken breasts shredded
3 oz cream cheese softened
1/4 c green salsa (aka salsa verde)- if you dont like spicy, use less of this!
1 can rotel style tomatoes and green chilis
1 can black beans
1 c shredded cheddar cheese
1/2 of an onion diced finely
1 Tbsp Fajita Seasoning

Combine cream cheese, salsa, beans, tomatoes, and cheese into a large bowl. 


Add Shredded Chicken.

Stop, entertain child #2.


Add Fajita Seasoning, Mix all together.


Stop, check on child #1, make sure she's not coloring on walls.


Spoon mixture into tortilla on the edge only,roll tightly and place in pan.


I froze 1/2 of the taquitos I made today(Since I only did a half recipe of the above).  These are great freezer meals, snacks, lunches so I normally make the whole recipe but freeze individually. To do that, lay them on cookie sheets not touching until they are frozen, then bag them together into a  gallon ziplock bag. 



Bake at 350 for 20 minutes and enjoy! I usually serve with Sour cream.

Fun Friday

After a whirl wind month of July, I was so happy to see the month of August arrive!!! I've been absent from blogging while working like a crazy lady and have tons to catch up on. One blog at a time, right?! So Fun friday!
After a bad morning, my Aunt took Caitlin and I to Downtown Disney for the second day in a row. She found these figurines she fell in love with yesterday, and Aunt Laura wanted to get the for her!! She loves her Lourla and Risch!
Aunt Laura met us there, picked up the friends (seen in bag) and we went to try Fresh-a peel for lunch! At lunch, she dined with her friends

ps Fresh a peel was SO tasty!! and POP chips, 100 calorie bags so tasty!!!!

We had to do the fountain. Ive watched other kids play in this fountain forever, and even though she didnt have a suit, she was playing it it!!  She had so much fun, we will HAVE to do this again!!!

Make My Meal Monday



Turkey Meatloaf and Cauliflower Mash


1lb ground turkey
1 small yellow onion chopped
1 green pepper chopped
2 eggs
1/4 cup ketchup
1/4 cup bbq sauce
2 Tbsp spicy mustard
Everglades or Mrs Dash
1 cup breadcrumbs or so

Preheat oven to 350!
Saute green peppers and onions in Skillet
Mix all the ingredients together.
Place in oven safe dish in a loaf shape.
Bake for about 1 1/2 hours or until done!

Cauliflower Mash
1 medium head cauliflower
3 Tbsp cream cheese
3 tbsp sour cream
4 cloves of garlic
3 Tbsp of butter

Chop cauliflower and rinse. 
Boil a pot of water and add cauliflower to it.
 Boil until soft (about 6-8 minutes)
Drain and add cauliflower to food processor.
Pulse processor and add the remaining ingredients
while the processor is running. Serve immediately after!

Make My Meal Monday

So I know its a day late, but you can deal right? During my Philly Cooking Creme party I came across a recipe I fell in love with and have cooked twice since!!!

Easy Tomato Basil Pizza
  • 1 can pizza crust or bag mix cooked ready to top

  • 1/2 cup Philadelphia Italian Cheese and Herb Cooking Creme

  • tomato, thinly sliced

  • fresh basil leaves, torn

  • 1/2 cup Kraft Shredded Mozzarella Cheese


  • 1 HEAT oven to 425ºF.

  • 2 SPREAD pizza crust with cooking creme; top with remaining ingredients.

  • 3 PLACE crust directly on middle oven rack.

  • 4 BAKE 10 to 12 minute or until cheese is melted.


  • Yup, its that easy and it is SO tasty!!! I could eat the whole thing by myself!!
